New Fez Tasting Tour
For a truly authentic break and to understand a country’s culture you “need to eat it” suggests Palais Amani’s head chef Houssam Laasiri. He has been not only creating many diverse Moroccan dishes for Palais Amani’s restaurant but also running Fez’s leading cookery school – Fez Cooking School.
Palais Amani, located inside the Fez medina, decided that to transmit the real culture of Morocco and this unique medina, they needed to curate a guide to showcase their favourite places in the streets and narrow alleys of the medina so that guests have a better understanding of the taste of Morocco. Twisting your way through the beautiful narrow alleyways and the sensation of the souks, guests will get to visit different places to tickle their taste buds and try delicious Fassi food such as Sfenj (Moroccan bread), pastry full of chebakia and other syrup-laden delicacies. Along the way, guests are invited to try delicious traditional Moroccan street food including dried meats, milawi, harsha, briwats, spicy sardines, hot potato cakes, soups, olives and more. You will stop at the famous honey souk where you will taste an array of delicious wild honeys, discussing their flavours and health benefits and then find out why honey is so vital in Moroccan cuisine and Islamic culture.
Led by a Moroccan chef, Fez Cooking School guests will be discovering how locals buy vegetables, meat and other goods directly from sellers in the market, choosing the best quality organic food. The foodie guide will take you through the process of discovering the world of spices and their uses in the ancient recipes, and influences of the jewish sephardic culture on Moroccan Cuisine. Guests will also enjoy Morocco’s famous mint tea along this tasting tour.
Fez is a haven for foodies! As you get lost to the massive outdoor street food markets, you’ll be treated to a long line of food stalls displaying a whole range of local foods and specialties. With so many different foods to choose from, it may seem daunting to decide which one to try. Thus, joining a tasting tour of Fez that’s led by a local is the best way to explore the city’s overwhelming food culture.
Cookery Class and Medina Foodie Tour
The Fez Cooking School offers visitors to Fez a unique insight into this magical city combining a foodie tour of the medina followed by a cookery class, all in a new purpose-built cookery school on Palais Amani’s roof terrace. Private and group workshops are available and offer a wonderful hands-on experience including time in the medina and then cooking. The guest selects their desired recipes, or the Fez Cooking School suggest a selection of Fassi, Moroccan or Sephardic dishes. The experience includes a tour of the food souks, tasting food along a two-hour tour of the medina, a cooking class with the newly gathered ingredients and lunch. Priced €165 per person, four hours.
Sleep Under the Stars
Star gazing at Palais Amani is an art form in itself. You can follow a detective trail around the architecture of the building. Spotting the six-pointed Star of David symbol in some of the exquisite hand-cut ceramic Zellige tiles and carved plasterwork of the building. Or guests can enjoy a cocktail on the roof terrace. with its 360-degree views of the ancient city of Fez. Gazing up at the hundreds of constellations in the night sky. For 2023. guests can literally sleep under the stars at the hotel.
Palais Amani have just added two new beautifully decorated rooms located on the roof terrace – one is a junior suite on the top terrace so you can literally fall asleep under a blanket of stars. The suite has direct access to the terrace that overlooks the old medina and has views of Zalagh Mountain. It is no surprise that stars are so important in Morocco. The national flag consists of a red field with a green, five-pointed star at its centre. This green pentagram is drawn with five straight lines. Each representing one of the five pillars of Islam. This style of star has long been used as a symbol of different religions and the colour green is also often associated with Islam.
Palais Amani showcases the finest authentic and traditional Moroccan decoration. A large garden of 600m2 is at the centre of the palace filled with orange trees where birds, permanent residents here, provide daily birdsong in this tranquil haven. This art deco riad has been frequently updated and modernised by Jemima and Abdel. It is now Fez´s leading independent hotel. The riad is home to 21 individually designed bedrooms and home to a restaurant, bar, library and underground hammam lit by candle light only.
